chicken biryani recipe
Ingredients:
- 2 ½ cups Basmati rice
- 2 tablespoons vegetable oil
- 2 small onions, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 2 teaspoons ground turmeric
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 2 ½ cups cooked, diced chicken
- 1 cup plain yogurt
- 1 tablespoon fresh lemon juice
- 2 teaspoons salt
- 2 cups chicken broth
- ¼ cup fresh cilantro, chopped, for garnish
Instructions:
1. Preheat oven to 350°F.
2. Rinse the rice several times and soak it for 30 minutes.
3. Heat the oil in a large skillet over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
4. Add the ginger, turmeric, coriander, cumin, and garam masala and cook for 1 minute.
5. Add the chicken, yogurt, lemon juice, and salt and stir to combine. Cook for 5 minutes, stirring occasionally.
6. Drain the rice and add it to the skillet. Stir to combine and cook for 2 minutes.
7. Pour the chicken broth into a 9x13 inch baking dish. Add the chicken and rice mixture and spread evenly.
8. Cover dish with foil and bake in preheated oven for 30 minutes.
9. Remove foil and bake for an additional 15 minutes.
10. Garnish with fresh cilantro before serving. Enjoy!
