Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1 (15-ounce) can tomato sauce
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Fresh cilantro, for garnish

Instructions:

  1. In a medium bowl, whisk together the yogurt, garlic, ginger, cumin, coriander, turmeric, cayenne pepper, and salt.

  2. Add the chicken to the yogurt mixture and stir to coat. Cover and refrigerate for at least 1 hour, or up to overnight.

  3. In a large skillet or saucepan, heat the oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.

  4. Reduce the heat to medium and add the tomato sauce. Simmer for 15-20 minutes, stirring occasionally.

  5. Stir in the heavy cream and butter and continue to simmer for an additional 5 minutes.

  6. Garnish with fresh cilantro and serve with rice or naan.
